Blistered Tomato Pasta.

An easy weeknight dish perfect for snowy February nights.

Blistered Tomato Pasta

  • Large onion, thinly sliced
  • 4-5 cloves garlic, thinly sliced
  • 4 tbsp. tomato paste
  • Grapeseed Oil
  • 1 tsp. brown sugar
  • 2 pints small tomatoes (red or gold)
  • 1-2 tsp. salt
  • 1-2 tsp. black pepper
  • 2-3 tsp. Italian Blend*
  • 1 tbsp. vegan butter
  • 1 pound of your favorite pasta

Prepare your pasta according to package directions (save 2 cups pasta water).

Caramelize onions in heavy bottom skillet (seriously, don't skip this step). *If you are in a hurry, sauté onions until golden brown and add brown sugar to give them a beautiful sweetness.*

Add garlic and herbs to pan, sauté until fragrant. Add tomato paste and cook for a few minutes. Add grape tomatoes (crush with potato masher), salt, pepper, 1 cup pasta water and vegan butter; simmering uncovered on medium heat, for about 10 minutes. 

Taste sauce for salt, etc.; toss with cooked pasta (add a bit of remaining pasta water at a time, if sauce is too thick).
