July 2020 has to be the hottest heat index month we've had in a while. We are puddling without the slightest effort, looking beaten up and dehydrated:(
Thankfully, our garden is pumping out 3-4 cucumbers per day and this is quickly becoming one of our favorite ways to stay cool. Cucumbers are packed with water, nutrients, and low in calories. With a few simple ingredients you'll be sipping at this lovely beverage in no time.
Cucumber Limeade
Adapted from Simply Recipes
- 2 cucumbers, chopped
- Juice of 3 limes
- Sprig of mint
- 6 cups filtered or spring water
- Simple Syrup (1 to 1 ratio of sugar and water)
Add cucumbers, lime juice, mint to a blender. Puree on high for a minute. Pour puree into large pitcher, add about 3/4 cup to 1 cup simple syrup and 6 cups of water. Stir well and serve well chilled over ice.
