As a child, I spent alot of time with my maternal grandparents. Those moments spent with them shaped my early development and influenced my love of gardening, food, and spices.
My grandfather (aka Daddy Tom) was a real whiz in the kitchen. His food was flavorful and delicious, and his gentle demeanor would convince the pickiest of eaters to try something new. At his end of the table was a lazy Susan full of herbs, spices (mostly salt free) and pepper sauces. Just watching him put a dash of this and that was simply mesmerizing to me.
One of his signature dishes was Cheese Toast. Not your everyday type either. His would start with crusty bread, piled high with eggs, sharp cheddar cheese, herbs and spices. And when the garden yielded his bountiful tomatoes, they were added to the bread. Here's my take on his delicious Cheese Toast. I think he would be proud. 🙂
Daddy Tom's Cheese Toast
- Loaf of crusty bread, sliced
- Shredded Cheese of Choice
- Ripe Tomatoes, diced
- Clove garlic, peeled
- Our Salt Free Italian Spice Blend
I prefer to use a toaster oven, but you can also use an oven broiler.
Line a baking sheet with foil or parchment paper, set aside. Start by cutting the bread into slices. Once bread is cut, rub the garlic cloves across the bread a few times. Add a layer of cheese, another of tomato, and final layer of cheese. Lastly, generously sprinkle the Italian Herb Blend. Toast or broil for about 3-4 minutes (keep watching as the bread burns easily).
Remove from oven and eat immediately.
