The easiest four ingredient salad for when you don't have time, energy or motivation to figure out what's for lunch. Healthy kale, crunchy pepitas and cherries give you all the "fall feels" in a bowl.
Easy Kale Salad

Salad
- 1 bunch kale
- 2 tsp. sea salt
- 3/4 cup pepitas
- 3 scallions, minced
- 1/2 cup dried cherries
Dressing
- 4 tbsp. pomegranate molasses
- 2 cloves garlic, grated
- 1/2 tsp. red pepper flakes
- Salt + Pepper to taste
- 1/2 cup olive oil
Wash and drain kale well. Remove stems and chop leaves into small pieces. Place in large bowl; add salt and massage to tenderize kale. Let stand for about 10 minutes. While you wait on kale, combine salad dressing ingredients in a jar and shake well.
Add pepitas, cherries and enough dressing to coat greens. Mix well; best eaten right away.
