I love handwritten recipe cards. They make me nostalgic and thankful. This recipe was handed down to me twenty five years ago and it's a good one. Perfect for when you are short on time (or just plain lazy).
This is a one pot/one baking pan dessert that doubles easily. I've swapped out every fruit imaginable (strawberries, blueberries, apples and plums). The sugar has been drastically reduced and you can use less depending on the fruit's natural sweetness. I'm using vegan butter and egg substitute; but feel free to use the real thing.
I dusted this one with The Glass Jar Natural Tea "Spiced Sucre" (Cardamom Vanilla) that will debut soon in our shop. Don't like cardamom? Cinnamon is delicious too.
Easy Peach "Pie"
- 4-6 Peaches, thickly sliced (leave skins on)
- 1/4 tsp. ground cardamom
- 3/4 cup vegan butter
- 1/2 cup organic sugar
- 1 cup flour
- 1/4 cup egg substitute (or 1 whole egg)
- Pinch of salt
- 1/4 tsp. vanilla
Place sliced peaches in baking dish, sprinkle with cardamom and stir until evenly coated. In a small saucepan, melt the butter until bubbly and slightly browned. Cool the butter; add sugar, flour, egg, salt and vanilla. Whisk until smooth and a batter like consistency. Pour evenly over the peaches. Bake at 350 for about 45-50 minutes or until peaches are slightly browned and batter is cooked through.
