This is my edible response to last week's heatwave 😜. Even though I could barely stand to let anything boil in 100 degree heat index, I made enough noodles for a few salads. It's a lifesaver to have the dressing, noodles and chopped veggies ready to go for meal prep.
Five Minute Noodle Salad with Cukes + Mint
- 8 oz. of your favorite noodle (I love fresh Shanghai noodles)
- 1/2 cucumber, thinly sliced
- 2 oz. fresh mint, minced
Dressing
- 3 tsp. dark soy sauce
- 3 tsp. chili garlic sauce
- 1-2 tsp. honey
- 1 tsp. sesame oil
- Dash of rice wine vinegar
- Dash of white pepper
Put all dressing ingredients in a jar and shake well; set aside. Boil your favorite noodles and drain with cool water. Add enough dressing until noodles are coated and toss with cucumbers and mint. Serve room temperature or cold.
